I wanted to serve an elevated side dish alongside two very spectacular bone-in rib eye steaks from the butcher. It was also the weekend, so I had time to spend on a dish that I wouldn't dedicate to on a weeknight. I cannot remember if I have ever made scalloped potatoes before, but wowza...what the heck was I thinking? These potatoes hit all the notes! Creamy, cheesy, rich and flavourful. And they paired beautifully with the steaks. This side dish is a great date night or dinner party option - they are decadent and will be sure to impress!
Overall, these were a great hit with the family. They were decadent, melt in your mouth and so incredibly flavourful. I know for sure that I would not make these on a weeknight due to the time you need to commit to make them. But, great for the weekend, a crowd, or a dinner party. They would pair well as a side dish alongside any protein - chicken, pork or beef. This is a keeper for sure! Comfort food win!
