The Flour Tortilla Episode [Episode 8] A Companion to Episode 1

At this moment in time, The Fajita Episode [Episode 1] is the most popular on the blog, as well as on social media. No surprise! Who doesn't love a good fajita recipe? Family friendly, quick, delicious and also budget friendly! With the rising costs of groceries, we are all becoming just a little more conscious of what we are buying, cooking and eating. And, with many of us working, parenting, teaching, and all the other things much more at home these days, we are spending a little more time in the kitchen.


So, why not elevate that popular recipe and take it one step further. Trust me. Although it is one more step, the effort in making your own flour tortillas is worth it. They are made with only 5 simple ingredients and they are soft and delicious. Your fajitas will taste THAT MUCH better.


Now, don't get me wrong. I do buy the best quality store bought tortillas from time to time. But, these homemade tortillas are hands down better. They can be made ahead of time, stored in the fridge and used for other recipes as well.


What you need:

  • 3 cups of all purpose flour

  • 1 teaspoon of salt

  • 1 teaspoon of baking powder

  • 1/3 cup of extra virgin olive oil

  • 1 cup of warm water

Place the flour, salt and baking powder in a bowl and mix. Make a well in the centre of the bowl using your hand or a wooden spoon. Add the oil and water. Mix well until all ingredients are incorporated. Take the dough and place it on a lightly floured surface and knead for about 2 minutes. The dough will become smooth. Divide the dough into equal portions. This recipe will yield about 12 to 14 tortillas, depending on the size you want. Form each piece into a ball and then flatten them with your hand. Once you have formed the dough and flattened each piece, you can cover them with a clean kitchen towel and let them rest for at least 15 minutes up to a couple of hours.

Note: You can absolutely use a mixer to make your dough. Simply use the dough hook on the mixer and follow the same steps. I skip the mixer...less dishes to wash :)


Once the 15 minutes are up, you can begin rolling out your tortillas. I use a tortilla press, but it is not necessary. A simple rolling pin will do the trick, which I also have done many, many times with this recipe. You want to roll the dough out as much as possible to make each tortilla paper thin. If you find that the dough keeps shrinking as you roll, allow your dough to rest longer - the gluten has not relaxed enough. As you make each tortilla, do not stack them as they will stick together. If you want to stack them, you will need to put a piece of parchment paper in between each layer to prevent sticking. I typically roll one at a time and cook them as I go.


Take a non-stick skillet and heat up to medium. Once hot, place one tortilla at a time in the skillet. Each side will only take a couple of minutes to cook. You are looking for some bubbles and light brown spots to develop on each side. Stack the cooked tortillas on a plate one on top of each other as they will steam each other. I wrap a kitchen towel around them to keep them warm and soft.


If you are making these ahead of time, you can reheat them quickly in a low temp oven, wrapped in aluminum foil, or on the stove top in a skillet.


And that's a wrap [no pun intended]! You have made the most delicious, simple ingredient flour tortillas that will make your fajitas next level!


What's more...you can:

  • Make any type of wrap with these

  • Cut them into triangles, brush with olive oil, sprinkle them with salt and bake them for tortilla chips

  • Use them for thin crust pizza
